  1. Roast two pounds of tomatoes or use store bought roasted tomatoes. Note: After the tomatoes have cooled, peel the skin off and threw it away.

Hungarian Lesco
Hungarian lesco is a tomato, onion, pepper stew.  You can make it sweet or you can make it spicy. Swap out the sweet peppers with spicy peppers or swap the sweet paprika for spicy paprika.  It's a great comfort dish but without all the fat. This was and still is one of my favorite childhood dishes. Thanks Mom!

Classic Lasagna with Bechamel
Lasagna can be made with bechamel sauce or  ricotta to balance out the tomato meat sauce.  Next time you make lasagna, try it with a bechamel sauce...if you haven't already.  It's a white sauce that's made with a roux (flour and butter) and milk.  Add some cheese into it and you have the best mac and cheese but that's another recipe. Give it a try and let me know what you think!

For Red Sauce

Build Lasagna
  1. Preheat oven to 350 degrees F. Lightly grease a 9 x 13 inch pan. Set aside.
  2. Spoon about 4-5 tablespoonfuls of sauce on the bottom of the pan. Layer with four lasagna noodles. It's okay to overlap them. Layer with red sauce, white sauce, cheese and repeat. Make sure to divide up the sauces and cheese to make a lasagna with 3 layers of noodles.

I came across this recipe online and had to try it.  I made a few alterations to my liking.  Hope you like it too. It's healthy, it's filling, and it's great when it's cold out.  If you want to add some smokey flavor, add some sauteed bacon at the beginning.

  1. Heat oil in a large dutch oven or soup pot over medium-high heat. Add onions, carrots, celery, and parsnips. Saute for 3 minutes.
