Here's yet another easy slow cooker recipe that's great to take into work as a lunch. It's healthy, filling, and easy to make on a Sunday morning in prep for the long week ahead. The salsa you use can make or break this recipe. Buy or make fresh chunky type salsa. Make it mild, medium, or hot based on preference. You can use chicken breast or chicken thighs. Chicken breast tends to be dry so I like using chicken thighs.
Top the dish off with guacamole, queso cheese, sour cream, red onions, or fresh cilantro! Serve on top of rice.
It's great having a slow cooker, it's easy to use and cooks in the background while you are taking care of things.
Hope you like this beef carnitas recipe. Its an alteration of a recipe I found on pinterest a while back. If you don't like beef, swap it out with a turkey breast or chicken. For extra spicy carnitas, add in one seeded, chopped jalapeno into the crock-pot with the peppers.
In a small bowl, mix the cumin, garlic powder, onion powder, cayenne, chili powder, salt, and black peppers.
Rub spice mix on flank steak and set flank steak in the bottom of the crock pot.
Pour water around meat.
Top the steak with the chopped onions and peppers.
Cook on LOW for 8 hours.
Once the meat is cooked, remove the meat and shred with a fork.
Mix back into crock-pot and toss with the cooked onions and peppers.
Serve with warm corn tortillas. Top with salsa, diced avocados, cheese, etc.
