Market Finds: The Zucchini

What’s a fast growing vegetable that’s great to grill, saute, bake, add to a soup, or steam?  Zucchini!

Zucchini is my one of my favorite vegetables and the peak time to buy is in the summer.  Cooked tender or left crispy, you cannot go wrong with it.  Next time you want to buy a good zucchini, follow these basic rules:

  • No blemishes skin
  • No bruises on the skin
  • Skin should have a smooth, glossy sheen
  • Skip buying it if they are not firm and watery
  • If fresh blossom is still attached BUY IT!
    • Fresh blossoms means the veggie was handed picked very carefully vs. a machine at the farm

How do you store fresh zucchini?  Easy!  Store in a plastic bag within the crisper drawer of the fridge.  They will keep for 4-7 days.

Why are zucchinis great for you? They are very low in calories and have folate, potassium, and vitamin A.  Low folate levels mean certain types of anemia due to low numbers of large red blood cells.  This can make you feel tired, shortness of breath, and even changes in skin color.  What does this all mean?  Eat more zucchini!
