This is a perfect recipe as a side next to any summer meal or when you made the mistake of buying too much summer squash at the farmers market. Enjoy!
Preheat oven to 350 degrees. Line a 10 x 13-inch baking sheet with aluminum foil and set aside.
In a small bowl, mix Parmesan, basil, oregano, salt and pepper to taste.
Place summer squash, zucchini, and onions on baking sheet. Drizzle with olive oil and mix with season.
Bake for 20 mins until veggies are tender. Then broil for 2-3 mins, to preference.
