Every time there’s over ripened bananas at the house, I make a banana nut bread of some sort. Over the years, I have formulated this recipe that includes quick cooking oats, chocolate chips, and vanilla extract. It’s always a hit and I always alter it in some way each time I bake it. I hope you enjoy this recipe as much as I do. Make sure to add walnuts or omit chocolate chips if you’d like!
Preheat oven to 350 degrees F.
Lightly butter and flour a 9 x 5 inch loaf pan.
In a stand mixer, cream butter and sugar until light and fluffy to form a lighter bread texture.
Add vanilla extract and eggs mix in one by one.
Crush bananas and add into mixture
In a separate bowl, combine all the dry ingredients and gradually add into liquid mixture. Use a spatula to fold the mixture together.
Fold in desired chocolate chips and/or walnuts.
Bake for 45-55 mins or test with a toothpick. If the toothpick inserted in center of the bread comes out clean the bread is done baking.
Let bread cool in the pan and then turn out bread once completely cooled. Slice and enjoy!
