Don’t waste those blueberries and strawberries! If they are starting to look sad in the fridge, make a compote out of them.  This compote is great on waffles or pancakes.

  • 1 Cup
    Bluberries, washed
  • 1 Cup
    Strawberries, trimmed, washed, cut in half
  • 1/4 Cup
    Sugar, granulated
  • 1 Tablespoon
    Lemon Juice
  • 1/2 Tablespoon
    Lemon Zest, from medium sized lemon
  • 1 Teaspoon
    Vanilla Extract (optional)


  1. Combine all ingredients in a medium saucepan and bring to a boil. About 5 minutes.

  2. Turn down heat to low and let simmer. About 10 minutes. Fruit will start breaking down.

  3. Serve while warm. Pour onto your favorite waffles or pancakes.

    Keep in fridge up to 4 days.

    Note: If you prefer a thicker compote, mix 1 tablespoon of cornstarch with water and stir. Allow to thicken.
