Fluffy buttermilk pancakes are great. Make a lot and freeze them for later. Perfect for a last minute homemade breakfast. Try the berry compote on top or your favorite maple syrup. For our little toddler, she likes to dip them in strawberry syrup…sometimes.
Serve them next to bacon, eggs, sausage, etc. =)
In a large mixing bowl, sift all dry ingredients and mix well.
In a medium mixing bowl, add all wet ingredients (except butter). Mix well.
Combine wet ingredients to dry ingredients, and whisk until its combined but don't over do it. It's OK to have lumps.
Add melted (yet cooled down) butter and fold in.
While the batter is resting for 2-3 minutes, heat a little of coconut oil or butter on a griddle. Scoop dollar sized amount of batter (or desired amount) and pour onto hot griddle. Spread the batter into a nice circle and let it cook 4-6 minutes. Flip over once you see bubbles or griddle side is golden brown. Cook another ~4 minutes.
Adjust the heat as needed.
Repeat until batter is gone.
Serve warm with fruit compote, maple syrup, butter, bacon, eggs...all the delicious breakfast favorites. Enjoy!
