  1. In a large soup pot, over medium-high heat. Add oil and cook onions, carrots, and celery. About 4-5 minutes.

  2. Add in sausage. Cook another 3 minutes allowing sausage to brown a little.

  3. Pour in broth. Add in salt, peppers, and thyme. Bring to a boil.
