Great as a lunch or dinner with lots of flavor. Serve on couscous, rice, salad or pita. Top with Tzatziki Sauce for extra kick!

  1. Combine all salad ingredients, mix well and set aside.

  1. Preheat oven to 400 degrees F. Combine all ingredients without over mixing.

  1. Serve on plate a mix of all the ingredients listed above. Add couscous and/or pita if desired. Top with extra parsley or feta cheese. Enjoy!
