On the internet, there’s millions of recipes for potato salad. Everyone claims to have the best or the easiest recipe.  My recipe is a combination of all those recipes =)

You can increase the amount of mustard or the change the type of mustard in this recipe according to what you would prefer.

Ingredients

  • 5
    small-medium white potatoes
  • 5
    Eggs, hard boiled, peeled
  • 3/4 Cups
    Mayonnaise
  • 2 Tablespoons
    Mustard, Spicy or Dijon
  • 3 Tablespoons
    Apple Cider Vinegar
  • 4
    Celery Stalks, diced
  • Salt and Pepper to taste
  • Hungarian Paprika, garnish
  • 4-5
    Green Onions, diced (optional)

Instructions

  1. In a large pot with water and salt, bring potatoes to a boil. Reduce heat to a simmer and let potatoes cook for another 10 mins or until potatoes are easily pierced with a knife or fork. Drain and peel potatoes once they are cool enough.

  2. Dice, warm potatoes into a large bowl and pour vinegar onto them. Let sit for 10-15 mins.

  3. Add green onions and celery into mix. Onions are optional!

  4. In a separate bowl, mix mayonnaise, salt and pepper, mustard well.

  5. Chop up the eggs and add into mixture.

  6. Combine the may mix with the potatoes. Garnish with paprika. Chill for a few hours or overnight before serving.
