On the internet, there’s millions of recipes for potato salad. Everyone claims to have the best or the easiest recipe. My recipe is a combination of all those recipes =)
You can increase the amount of mustard or the change the type of mustard in this recipe according to what you would prefer.

In a large pot with water and salt, bring potatoes to a boil. Reduce heat to a simmer and let potatoes cook for another 10 mins or until potatoes are easily pierced with a knife or fork. Drain and peel potatoes once they are cool enough.
Dice, warm potatoes into a large bowl and pour vinegar onto them. Let sit for 10-15 mins.
Add green onions and celery into mix. Onions are optional!
In a separate bowl, mix mayonnaise, salt and pepper, mustard well.
Chop up the eggs and add into mixture.
Combine the may mix with the potatoes. Garnish with paprika. Chill for a few hours or overnight before serving.
