I have never been a big fan of chicken noodle soups. Most of them are so bland and boring but that’s my opinion….
My favorite soups have tons of vegetables in them with homemade noodles my mom used to make. This soup is not a childhood soup but it makes me feel better when I’m under the weather and need a healthy, comforting soup. Adding mushroom ravioli makes it more delicious and unique. Pick a different ravioli or tortellini if you’d like. Add parsnips for another healthy kick. I ate a ton of parsnips when I was pregnant for all it’s health benefits. Hope this soups is a favorite for you too…super easy and delicious!
In a large pot, heat oil and saute onions, carrots, and celery about 4-5 minutes.
Add zucchini and saute for another 2 minutes.
Add basil, oregano, salt and pepper.
Add broth and cover. Allow to simmer until zucchini is cooked 15 minutes.
Add ravioli carefully. Allow to cook per package directions. Mine need 10 minutes and they will float to the top.
Add fresh parsley for a fresh taste. Garnish with Parmesan cheese and serve hot.
