Ingredients

  • 1
    Smoked Sausage, cut into 1 inch slices
  • 2
    Bell Peppers, sliced
  • 1
    Onion, medium, peeled, sliced
  • 2
    Garlic, minced
  • 2 Cups
    Rice, long grain
  • 4 Cups
    Chicken or Veggie Broth
  • Salt and Pepper to taste
  • 2
    Olive Oil
  • 2 Tablespoons
    Parsley, fresh, chopped
  • 1/8 Teaspoon
    Turmeric

Instructions

  1. Heat olive oil in a large skillet, add sliced sausage. Cook about 5 minutes.

  2. Add onions, garlic, and peppers. Saute for 5 minutes or until onions translucent.

  3. Add rice and sausage, stir well. Pour broth on top and allow to come to a boil. Mix turmeric, salt and pepper, as desired.

    Once it boils, reduce heat to a simmer and cover. Allow to cook for 25 minutes or until all broth is absorbed and rice is tender.

  4. Sprinkle on parsley.
