So many recipes call for cooked chicken. Instead of buying a rotisserie chicken, make this chicken recipe instead.
Make some ahead of time and freeze it. They are great for tacos, chicken salad, on top of a salad, in soup, etc.
In a large pot, add carrots and celery with oil. Toss for 2-3 minutes.
Add chicken, salt, bay leaf, black pepper corns, and liquids.
Make sure to chicken is submerged under the liquids. Once it boils, let it simmer for 20 minutes or until chicken turns pale and is fully cooked.
Remove ONLY chicken from pot, shred, and use as desired.
Chicken should keep for 2-3 days in the fridge or 1-2 months in the freezer.
