Enjoy the summer with this great strawberry with blueberry cobbler. Serve it with a good vanilla ice cream. It’s the perfect summer dessert.
In a large bowl, combine sliced fresh strawberries and sugar. Mix well and let sit for 30 minutes.
In a medium sauce pan, add strawberry mix and let it cook for 5 minutes.
In a small bowl, mix cornstarch with enough water to dissolve it. Add mixture to pan of strawberries. Stir occasionally.
Remove from heat and set aside.
In a medium bowl, add flour, butter, brown sugar, and oats. Blend well until mixture is crumbly.
Add cinnamon if desired.
Preheat oven to 350 degrees.
On a baking sheet lined with foil, place 4 ramekin dishes. Spoon cooked strawberries evenly and top with oat topping.
Bake for 20-25 minutes until cobbler is bubbly.
Let it cool for 5-10 minutes but serve warm.
