Vegetable Frittata
Eggs can be served breakfast, lunch, or dinner and a frittata is a perfect way to serve it.  Skip the quiche and do a frittata instead.  The crust on the quiche is just extra calories. Do you want to make a healthier frittata?  Make it with egg whites only and skip the cheese. To make it your own, add your favorite vegetables and/or protein.

  1. Preheat oven to 400 degrees F. Heat oil in a large (8 inch) oven safe skillet. Add veggies. Saute peppers and mushrooms until tender over medium-high heat. About 3 minutes.
  2. Pour egg mixture on top of veggies. Stir well. Sprinkle on cheese if desired. Bake in oven for 5 minutes or until the eggs start to set.

  3. Note: If you want the top to brown, turn on the oven to broil. Broil for 1-2 minutes max or until cheese starts to bubble.
