Hungarian Lesco

Hungarian lesco is a tomato, onion, pepper stew.  You can make it sweet or you can make it spicy. Swap out the sweet peppers with spicy peppers or swap the sweet paprika for spicy paprika.  It’s a great comfort dish but without all the fat.

This was and still is one of my favorite childhood dishes. Thanks Mom!

Lasagna can be made with bechamel sauce or  ricotta to balance out the tomato meat sauce.  Next time you make lasagna, try it with a bechamel sauce…if you haven’t already.  It’s a white sauce that’s made with a roux (flour and butter) and milk.  Add some cheese into it and you have the best mac and cheese but that’s another recipe.

Italian food means you need garlic bread.  Make sure everyone eats the garlic bread with you.  That way you all will smell of garlic lol!

Note: If you want a garlic cheese bread, sprinkle some cheese before baking.

It’s great having a slow cooker, it’s easy to use and cooks in the background while you are taking care of things.

Hope you like this beef carnitas recipe.  Its an alteration of a recipe I found on pinterest a while back.  If you don’t like beef, swap it out with a turkey breast or chicken.  For extra spicy carnitas, add in one seeded, chopped jalapeno into the crock-pot with the peppers.
