Seasoned Jasmine Rice

Seasoned Jasmine Rice

I came across this jasmine rice recipe a year ago, and after a few alterations, it is hands down my favorite way of making jasmine rice.  This is so much better than a boxed rice. You will love the smell this rice will make as you are cooking it.

Use coconut oil instead of olive oil. Its health benefits are up to debate but I like using it more than vegetable oils or olive oil.

Slow Cooker Vegetable Barley Soup

Slow Cooker Vegetable Barley Soup

Throw everything into the slow cooker and let it cook until the barley is tender.  This is a healthy soup filed with vegetables and flavor. If you are using weight watchers, this is a 5-point meal.

Enjoy with a slice of toast and top with cheese.

Shredded Chicken

Shredded Chicken

So many recipes call for cooked chicken.  Instead of buying a rotisserie chicken, make this chicken recipe instead.

Make some ahead of time and freeze it.  They are great for tacos, chicken salad, on top of a salad, in soup, etc.
