I came across this jasmine rice recipe a year ago, and after a few alterations, it is hands down my favorite way of making jasmine rice.  This is so much better than a boxed rice. You will love the smell this rice will make as you are cooking it.

Use coconut oil instead of olive oil. Its health benefits are up to debate but I like using it more than vegetable oils or olive oil.

Here’s yet another easy slow cooker recipe that’s great to take into work as a lunch.  It’s healthy, filling, and easy to make on a Sunday morning in prep for the long week ahead.  The salsa you use can make or break this recipe.  Buy or make fresh chunky type salsa. Make it mild, medium, or hot based on preference. You can use chicken breast or chicken thighs.  Chicken breast tends to be dry so I like using chicken thighs.

Top the dish off with guacamole, queso cheese, sour cream, red onions, or fresh cilantro! Serve on top of rice.
