Moroccan Beef Stew

Moroccan Beef Stew

Flavorful beef stew that’s a take on a Moroccan classic. This dish is inexpensive and comfort food all the way. Enjoy it with a thick slice of bread or some rice. Store leftovers in the freezer for up to 2 months!

Chipotle Chicken

Chipotle Chicken

A great chicken marinate that goes well with a burrito bowl or Buddha bowl. Add some rice, beans, peppers, corn, salsa and guac for a dinner your family will love!

Have fun with this one!

Easy Cheesy Chili Mac

Easy Cheesy Chili Mac

Easy and cheesy comfort food that you will love. Add more heat with green chili or change the taste by adding fire roasted diced tomatoes. If you are not a beef eater, swap with ground turkey or chicken. Hope you enjoy it as much as we did.

Cilantro Lime Rice

Cilantro Lime Rice

Fluffy, fragrant rice with hits of cilantro and lime. This is a great side next to any Spanish influenced dish.

Butternut Squash and Red Lentil Soup

Butternut Squash and Red Lentil Soup

It’s getting cold out and that means warm soups. Try this butternut squash with red lentils soup. Serve with croutons or pita chips.

Seasoned Jasmine Rice

Seasoned Jasmine Rice

I came across this jasmine rice recipe a year ago, and after a few alterations, it is hands down my favorite way of making jasmine rice.  This is so much better than a boxed rice. You will love the smell this rice will make as you are cooking it.

Use coconut oil instead of olive oil. Its health benefits are up to debate but I like using it more than vegetable oils or olive oil.

Chicken Burrito Bowl

Chicken Burrito Bowl

Here’s yet another easy slow cooker recipe that’s great to take into work as a lunch.  It’s healthy, filling, and easy to make on a Sunday morning in prep for the long week ahead.  The salsa you use can make or break this recipe.  Buy or make fresh chunky type salsa. Make it mild, medium, or hot based on preference. You can use chicken breast or chicken thighs.  Chicken breast tends to be dry so I like using chicken thighs.

Top the dish off with guacamole, queso cheese, sour cream, red onions, or fresh cilantro! Serve on top of rice.

Greek Meatballs Salad with Tzatziki Sauce

Greek Meatballs Salad with Tzatziki Sauce

Great as a lunch or dinner with lots of flavor. Serve on couscous, rice, salad or pita. Top with Tzatziki Sauce for extra kick!

Easy Crockpot Chili

Easy Crockpot Chili

There are countless of “the best” chili recipes online or in cookbooks.  My version is a hack of all of them and a great base for any start up chili recipe in the crock-pot.  This chili is great a meal on it’s own or you can top off nachos or hot dogs at your next get together.

If you don’t eat ground beef, swap it with ground turkey or chicken.  Top the chili with cheese, hot peppers, or avocados.

Hope you like it!
