Moroccan Beef Stew

Moroccan Beef Stew

Flavorful beef stew that’s a take on a Moroccan classic. This dish is inexpensive and comfort food all the way. Enjoy it with a thick slice of bread or some rice. Store leftovers in the freezer for up to 2 months!

Leftover Fried Rice

Leftover Fried Rice

This speedy fried rice smells amazing and is full of flavor. Make it custom for your family. Leave out the meat, add meat, add leftover vegetables, add tofu, or whatever you like! Have fun changing it up and use the foods in your pantry and/or fridge.

Caution! This recipe does have butter in it. Trust me, it makes it better but if you want it to be healthier, swap the butter for coconut oil. Enjoy!

Chicken Stock

Chicken Stock

Every kitchen has a staple or a “base for cooking” and in most kitchens, it is a great chicken stock.

Chicken stock is great to use in soups, easy to freeze for later use, and saves money than buying store bought stock.

This is so easy to make! Let me know what you think…

Balsamic Mushrooms

Balsamic Mushrooms

Mushrooms are a great side next to a steak, chicken, tossed in a salad, or on an antipasto platter.  Add balsamic to the mushrooms to make them more flavorful, but only add at the end of cooking. Balsamic vinegar isn’t intended to cook with, cooking it kills the distinctive flavorful taste =)

Also, before you use the balsamic, make sure you bought a good balsamic vinegar.

Vegetarian Minestrone Soup

Vegetarian Minestrone Soup

Healthy vegetarian minestrone soup that cooks within 30 minutes. Use vegetable stock or chicken stock as you prefer. Add any vegetables…or what’s in your fridge / pantry =)

Enjoy!

Chicken Burrito Bowl

Chicken Burrito Bowl

Here’s yet another easy slow cooker recipe that’s great to take into work as a lunch.  It’s healthy, filling, and easy to make on a Sunday morning in prep for the long week ahead.  The salsa you use can make or break this recipe.  Buy or make fresh chunky type salsa. Make it mild, medium, or hot based on preference. You can use chicken breast or chicken thighs.  Chicken breast tends to be dry so I like using chicken thighs.

Top the dish off with guacamole, queso cheese, sour cream, red onions, or fresh cilantro! Serve on top of rice.

Greek Meatballs Salad with Tzatziki Sauce
