The salsa you use can make or break this recipe. Buy or make fresh chunky type salsa. Make it mild, medium, or hot based on preference. You can use chicken breast or chicken thighs. Chicken breast tends to be dry so I like using chicken thighs.
Top the dish off with guacamole, queso cheese, sour cream, red onions, or fresh cilantro! Serve on top of rice.
