This speedy fried rice smells amazing and is full of flavor. Make it custom for your family. Leave out the meat, add meat, add leftover vegetables, add tofu, or whatever you like! Have fun changing it up and use the foods in your pantry and/or fridge.
Caution! This recipe does have butter in it. Trust me, it makes it better but if you want it to be healthier, swap the butter for coconut oil. Enjoy!
Pesto Shrimp with Mushrooms is an easy sautéed dinner that can be on the table within 30 mins flat! Make it spicy by adding crushed red pepper, sprinkle cheese to make it more cheesy, add pine nuts for a crunch, or add fresh basil to lighten it up. It’s gluten free and low carb. Hope you enjoy this as much as my family enjoyed it!
Hope you enjoy this as much as we did!
Chicken lemon rice is an iconic comfort soup found at most coney islands or Greek restaurants. It’s the perfect soup for the days when you have a cold and/or need something warm and comforting.
Fun fact, did you know the Greek name for this soup is Avgolemono meaning egg-lemon sauce?
The white spicy sauce is great over the chicken and corn tortillas. It’s a time consuming recipe but the end product is delicious. Yes, you will have to wash an extra few items due to the assembly process of this recipe. Perfect comfort food you can make as healthy as you please. I use white corn tortillas, but you can choose to use flour or yellow corn tortillas.
Serve the enchiladas with rice or eat by themselves. Enjoy!
This is a great salad as a side for a BBQ or as a base for a lunch or dinner salad. You can make it hearty or fresh based on the fresh vegetable you add into it. Chop up cucumbers, tomatoes, peppers, red onions with warm grilled cut off the cob for a great summer salad and add your favorite salad vinaigrette dressing. The dressing can be store bought or homemade. I like adding zesty Italian dressing into the mix.
Check out the grilled corn recipe before adding corn into this toasted salad. Enjoy!
