Nothing beats a crunchy cookie snack loaded with chocolate with your morning coffee. This recipe is more cookie than the traditional jaw breaking biscotti. Add or skip the walnuts. Try swapping the chocolate chips for mini chips or use mini white chocolate chips to change it up!
Preheat oven to 350 deg F.
Line a cookie sheet with parchment paper or oven proof silicon pad.
In a large bowl, cream sugar and butter. Add vanilla extract.
Sift in flour, baking power, and salt. Mix well.
Fold in chips and walnuts.
Remove dough from bowl. Divide into two and form logs on cookie sheet.
Bake for 20 - 25 mins or until bottom is a light golden brown.
Remove from oven and allow to cool.
Reduce oven temperature to 300 deg F.
Once logs are cool to the touch, slice into 1/2 inch slices and place back on cookie sheet.
Bake 15 mins or until both sides are turn a golden brown color.
Make sure to flip the cookies during the baking time!
Remove from oven and allow to cook on a rack.
These cookies won't last very long but if any are left, store in tin container. Enjoy!
