Hungarian Potato Vegetable Soup
Comfort soup for those days when it's cold outside or when you are feeling homesick. Serve it hot to your family and friends with a hearty, crusty slice of bread. Hope you love it as much as I do. Enjoy!

Instructions
  1. In a large dutch oven, cook bacon until crisp. Reserve 1 tablespoon of the bacon fat and set aside and remove the bacon.
  2. Add onions into the dutch oven with rest of bacon grease and cook for 2-3 minutes. Then add rest of the veggies.
  3. Season veggies with salt and pepper. Toss in bouillon and pour in water.
  4. Cook until veggies are tender.
Roux
  1. In a small pan, add reserved bacon fat, paprika, and flour. Fry for a few minutes until mixture heats through and starts to bubble. Set aside.
  2. Mix some of the soup into the roux and then pour the roux mixture into the soup until it's smooth and soup thickens. Note: this will help prevent lumps.
  3. Serve while hot with a nice slice of crusty bread. Enjoy!!!!
