Instant Pot Tri-Corn Chowder
Comfort food without the guilt and wait! Try this recipe in your instant pot. Serve with a hearty slice of corn bread =) Hope you enjoy this recipe. If you want it to be creamier, swap the milk for heavy cream. If you don't like the tri-colored corn, use regular frozen corn.

  1. Press Saute feature on instant pot, add bacon. Allow the fat to render out and the bacon to crisp. Remove bacon and bacon fat. Reserve 2 tablespoons in the pot.
  2. Add onions and celery. Cook for 2-3 minutes or until veggies are softened. Turn off Saute feature.
  3. Add potatoes, corn, salt, pepper, and coriander. Mix well. Pour broth and close with lid and seal.
  4. Close instant pot with lid and seal. Turn on Pressure feature for 5 minutes. Make sure seal is closed!!!!
  5. Once cooking is complete, release pressure, stir in milk. Add extra salt and pepper to taste, if desired.
  6. Serve while hot. Sprinkle with fresh parsley and bacon bits. Enjoy!
