Leftover Fried Rice
This speedy fried rice smells amazing and is full of flavor. Make it custom for your family. Leave out the meat, add meat, add leftover vegetables, add tofu, or whatever you like! Have fun changing it up and use the foods in your pantry and/or fridge. Caution! This recipe does have butter in it. Trust me, it makes it better but if you want it to be healthier, swap the butter for coconut oil. Enjoy!

  1. Melt 1 tbsp of butter in a large skillet over medium-high heat. Add eggs and cook until scrambled. Remove and set aside.
  2. Add 1 tbsp of butter to large skillet, allow to melt, add onions, carrots, garlic, and asparagus. Season with pepper and salt. Saute for about 5 minutes or until vegetables are tender.
  3. Add last tbsp of butter, allow to melt and fold in rice. Drizzle on soy sauce, stir, and increase heat to high. Fry the rice for about 3-5 minutes.
  4. Add scrambled eggs and drizzle in toasted sesame oil.
  5. Serve while hot and enjoy!!
