Pesto Shrimp with Mushrooms is an easy sautéed dinner that can be on the table within 30 mins flat! Make it spicy by adding crushed red pepper, sprinkle cheese to make it more cheesy, add pine nuts for a crunch, or add fresh basil to lighten it up. It’s gluten free and low carb. In a large skillet, heat 1 tablespoon of oil to medium-high heat and toss in mushrooms. Cook for about 2-3 minutes or until mushrooms have released their liquid.
Remove from skillet and set aside.
Add second tablespoon of oil and toss in shrimp. Allow each to lay flat in pan. Shrimp should cook for 3-5 mins. Quickly turn over mid way of cooking time.
Sprinkle with a pinch of salt, pepper, and red crushed pepper, as desired. (optional)
Add mushrooms back into skillet. Add pesto and stir together.
Serve immediately and enjoy!!
