Smoked Sausage, Kale, and Potato Soup
I was looking for a sausage kale soup the other day and had a hard time finding one. I did finally find one but it needed some altering plus I wanted to use my instant pot!
Give this a try and let me know what you think. This soup is hearty, comforting but without the extra fat. Enjoy with a crusty slice of bread!
In the instant pot, turn on saute mode, melt butter and add in sausage. Allow to brown 2-3 minutes. Remove from pot and set aside.
Add in onions. Cook about 3 minutes.
Add in garlic. Cook another 1 minute. Turn off instant pot.
Toss in potatoes, kale, and broth.
Put lid on top, turn on pressure cooker for 4 minutes.
Note: make sure pressure cooker is sealed.
Once complete, vent out steam.
Potatoes should be tender but not mushy. Pour in milk and sprinkle with salt and pepper to taste.
Add sausage back in and stir.
Serve while hot with corn bread or a crusty slice of bread. Enjoy!
Note: if you like a thicker soup, stir together 1 tbsp of corn starch with 5 tbsp water and slowly pour into soup while saute feature is on. About 5 minutes.
