Leftover Fried Rice

Leftover Fried Rice

This speedy fried rice smells amazing and is full of flavor. Make it custom for your family. Leave out the meat, add meat, add leftover vegetables, add tofu, or whatever you like! Have fun changing it up and use the foods in your pantry and/or fridge.

Caution! This recipe does have butter in it. Trust me, it makes it better but if you want it to be healthier, swap the butter for coconut oil. Enjoy!

Easy Baked Ziti with Ricotta

Easy Baked Ziti with Ricotta

A toddler approved meal!  Pasta with any tomato sauce, ricotta, and hidden veggies.  The wonderful thing about this recipe is it’s easy, I can alter it based on what veggies I want to add, and I can add ricotta or cottage cheese.  Ricotta and cottage cheese are packed with protein and are an excellent source of calcium, magnesium, and selenium. If you want to add meat to it, go ahead!

….I also forgot to mention that it’s delicious too!

Roasted Vegetables with Herbs De Provencal

Roasted Vegetables with Herbs De Provencal

Instead of sauteing the veggies, roast the veggies on a sheet pan for a quick side next to any protein.

Enjoy!
